Busy Week-End

Are you ever in the store and see that precooked tube of polenta and wonder what people use it for? Or think like my Southern friends and turn your nose down at it because who would buy precooked polenta?! Well, I found a great use for it. Remember that Texas Chili that I made earlier in the week? It turns out that Food Network has a follow up recipe for which you use your leftovers and yes, precooked polenta. I made it for the weekly "Don't Throw it Away Thursday", aptly named by Katie. Basically it's a pot-luck style dinner party and everyone brings their leftovers to share. Cameron and I hosted this past Thursday, and technically I broke the (unwritten) rules of DTAT by cooking a meal for this event, but I figured that I pretty much used all leftovers (except the polenta) and when you're the host you can bend the rules a bit.  The casserole was delicious and such a big hit at the party that I didn't even manage to take a picture. I highly recommend making both the chili and it's follow up Chili Corn Casserole.

Looking back, I'm not sure what I did all day Friday, other than look for jobs (see previous post) but, Friday night Cameron played in his first Duke Grad Rugby game at NC State. We have really been missing our Zog Sports Touch Football back in New York City so he was psyched to get out on the field for the first game of the season. Since it was all the way in Raleigh (at rush hour) I stayed behind and drank his wine at Fuqua Friday while figuring out tailgating plans for the Duke vs. Alabama game the following day. Thank goodness for all of us Partners because we managed to put together a fun and festive tailgating party and everyone had a great time.




Since we couldn't coordinate a grill we opted for picking up some of the south's most famous chicken and biscuits:

After tailgating for a few hours mid-day, Saturday night was kind of a bust. We picked up dinner from our favorite Thai restaurant, Twisted Noodle and burrowed in for a quiet night. Sunday I did my part for the Lung Transplant Foundation and got a group together for Lungapalooza. It was a gorgeous day and the event well exceeded LTF's fundraising goals. Thank you to the fellow Fuqua Partners who made it out. 

Well that's all for now. There's not too much on tap for this week, but we are heading to West Virginia this weekend with the Outdoor Club for some white water rafting. I'm sure I will write a post mid-week expressing how nervous and excited I am for the trip. If you have any tips to send along ahead of time, they'd be much appreciated.
